Ingredients
- 350 g Penne Pasta
- 50 g Butter
- 1 tsp Paprika
- 0.25 tsp Pepper
- 2 tins Tuna in Spring Water
- 150 g Sweetcorn
- 600 ml Semi Skimmed Milk
- 1 tsp Dijon Mustard
- 4 tbsp Grated Parmesan
- 50 g Plain Flour
- 200 g Extra Mature Cheddar
- 0.5 tsp Salt
- 50 g Sun Dried Tomatoes
- 1 tbsp Fresh Parsley
Method
- Preheat the oven to 180°c.
- Chop the tomatoes and grate the cheddar.
- Cook the pasta in a saucepan of salty boiling water for about 8 minutes.
- Meanwhile, melt the butter in another saucepan then stir in the flour. Keep stirring and cook for a further minute.
- Whisk in the milk until the sauce thickens then turn the heat off.
- Stir in the grated cheddar cheese, tomatoes, mustard, paprika, salt, and pepper.
- Drain in the pasta, reserving some of the cooking water, and stir in to the mixture. Add more of the cooking water to loosen a little.
- Add it all to an ovenproof dish, cover with the grated parmesan, and bake in the oven for 20 minutes.
- Meanwhile, chop the parsley and sprinkle over the baked dish before serving.
Notes
- This tuna pasta bake is an easy family favourite made with store cupboard staples, combining creamy cheesy sauce, sweetcorn and tender tuna for a comforting dinner that always hits the spot.
Tips
- If you want to prep ahead, follow steps up to step 8 but don't put in the oven. Cover with foil and cool. Store in the fridge for up to 3 days then bake as described in step 8.
Swaps and substitutes
- You can use frozen sweetcorn instead of tinned if you have it.
