Ingredients
- 400 g Penne
- 600 g Chopped Tomatoes
- 1 pinch Salt
- 60 g Grated Parmesan
- 2 tsp Chopped Garlic
- 2 tbsp Tomato Puree
- 1 tsp Sugar
- 1 pinch Pepper
- 2 tbsp Fresh Parsley
- 150 g Smoked Sausage
- 2 tbsp Olive Oil
- 1 tsp Chilli Flakes
Method
- Slice the smoked sausage into bite-sized pieces. Heat the olive oil in a large frying pan over a medium heat, add the sausage and cook for 3-4 minutes, turning occasionally, until browned around the edges.
- Push the sausage towards the sides of the pan, add the garlic and chilli flakes to the centre and cook for around 1 minute, keeping an eye on the garlic so it does not burn.
- Stir in the tomato puree and cook for another 1-2 minutes.
- Add the chopped tomatoes, sugar, salt and black pepper and stir everything together. Leave to simmer gently for around 10 minutes until the sauce starts to thicken.
- Meanwhile, bring a large pan of water to the boil and cook the penne according to the packet instructions until just tender. Scoop out a mugful of the pasta water before draining.
- Add the drained penne to the sausage and tomato sauce with a small splash of the reserved pasta water.
- Roughly chop the fresh parsley, then stir half of this with half the parmesan through the pasta.
- Toss everything together for 1-2 minutes until the sauce coats the penne, adding another splash of pasta water if it looks a little dry.
- Divide between three plates and finish with the remaining parmesan and fresh parsley.
Notes
- Smoky sausage and penne coated in a rich tomato and chilli sauce, finished with Parmesan and fresh parsley. It’s quick, comforting and has just enough heat to make a simple pasta night feel a bit more interesting.
Tips
- Start with the stated amount of chilli flakes, then add more at the end if you want extra heat.
- Save some pasta water before draining. A small splash helps loosen the sauce and makes it cling to the penne.
Swaps and substitutes
- Smoked Sausage: Use another fully cooked smoked sausage or a spicy sausage if you want more heat.
- Penne: Rigatoni, fusilli or another short pasta shape will work well.
No-waste tips
- Leftover sausage: Slice it into omelettes, pasta, pizza or sandwiches.
