Ingredients
- 360 g Linguine
- 225 g Cooked & Peeled Prawns
- 1 item Onion
- 2 tbsp Curry Paste
- 2 tsp Chopped Garlic
- 2 tbsp Fresh Coriander
- 1 tbsp Fresh Parsley
- 1 tsp Dried Mint
- 1 tbsp Lemon Juice
- 1 tbsp Olive Oil
- 1 pinch Salt
- 1 pinch Pepper
Method
- Finely chop the onion, and the fresh herbs.
- Heat the olive oil in a large frying pan and add the onion and garlic. Fry for 5 minutes until softened. Meanwhile, boil the kettle and cook the linguine in a separate saucepan for around 10 minutes.
- Add the curry paste to the frying pan and cook for a further 30 seconds, mixing together and moving around the pan to release the flavours.
- Add some of the pasta cooking water, around 12 tablespoons, to the frying pan and stir for around 30 seconds. Then add the prawns, mint, parsley, 1 tbsp coriander, lemon juice and salt and pepper.
- Once the pasta is cooked, drain (reserving some of the cooking water), and add to the frying pan. Give it a good stir on a very low heat and add a little more cooking water if it's looking too dry.
- Serve garnished with the remaining coriander.
Notes
- A quick prawn pasta dish that is so quick to whip up, mainly from pantry ingredients. This will definitely be on your rotation!
Swaps and substitutes
- You can use fresh cooked prawns instead of frozen, just add them a little later to ensure they are warmed through.
