Ingredients

  • 100 g Chorizo
  • 150 g Cooked & Peeled Prawns
  • 200 g Long Grain Rice
  • 1 item Red Pepper
  • 1 item Onion
  • 100 g Garden Peas
  • 2 item Chicken Stock Cube
  • 1 tsp Chopped Garlic
  • 0.5 tsp Turmeric
  • 0.5 tsp Paprika
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 tbsp Olive Oil

Method

  1. Prepare the ingredients first. Slice the chorizo thinly. Chop the onion and pepper into small pieces.
  2. Heat the olive oil in a large frying pan and add the chorizo, onion and garlic. Fry for 5 minutes until the onions are soft and the chorizo starts to crisp. Meanwhile, boil the kettle and make up 900ml of chicken stock using the stock cubes.
  3. Add the pepper and fry for 2 more minutes. Keep the ingredients moving around the pan.
  4. Add the rice to the pan and stir around for 1 minute.
  5. Add the stock, turmeric and paprika and stir well to mix everything together. Simmer gently for 12 minutes. Add more water if it looks to be drying out.
  6. Add the peas, prawns, salt and pepper and stir well. Continue to simmer for 2 more minutes then serve.

Notes

  • A taste of the med, this dish is easy and tasty, and all in one pan. Perfect for a midweek meal!

Tips

  • Cooking chorizo can produce a lot of excess fat. If you prefer you can remove the fat with a bit of kitchen roll (carefully!)
  • This dish is a tasty, wholesome meal in itself but why not add some crusty bread to mop up the juices and wipe the plate clean!

Swaps and substitutes

  • I use frozen cooked prawns for convenience as I always have a bag in the freezer. You can use fresh prawns, cooked or raw, but make sure you adjust cooking times accordingly and ensure prawns are fully cooked through before serving.
  • You can use a clove of garlic instead of prepared chopped garlic but why...really....why?
