Ingredients
- 175 g King Prawns
- 100 g Chorizo
- 400 g Linguine
- 250 g Passata
- 1 400g tin Cherry Tomatoes
- 1 item Onion
- 2 tsp Chopped Garlic
- 1 tsp Paprika
- 1 tsp Chilli Flakes
- 1 bunch Fresh Parsley
- 1 pinch Salt
- 1 pinch Pepper
- 1 tbsp Olive Oil
Method
- Slice the chorizo and onion.
- Heat the oil in a large frying pan and add the chorizo, onion and garlic. Fry for 5 minutes until the chorizo starts to crisp but careful not to burn it.
- Meanwhile, cook the linguine in a separate saucepan of boiling water for 10 minutes.
- To the frying pan, add the paprika, chilli flakes, tomatoes and passata. Stir well and simmer for 10 minutes whilst the linguine is cooking. Chop the parsley.
- Add the king prawns to the chorizo and sauce. Season with salt and pepper, and simmer for as further 5 minutes until the prawns are pink and cooked through.
- Add the cooked linguine to the pan, adding a bit of the pasta water to bind the sauce to the pasta. Stir well and turn off the heat.
- Serve the pasta sprinkled with the chopped fresh parsley.
Tips
- Cooking chorizo can release quite a bit of oil. If you like you can carefully drain this off or soak up with a bit of kitchen roll.
Swaps and substitutes
- You can use frozen king prawns just make sure fully defrosted before use.
