Ingredients
- 400 g Chicken Breast
- 125 g Mushrooms
- 1 item Onion
- 130 g Beansprouts
- 200 g Long Grain Rice
- 4 items Spring Onion
- 2 tsp Cornflour
- 4 tbsp Hoisin Sauce
- 4 tbsp Oyster Sauce
- 1 tbsp Soy Sauce
- 2 item Eggs
- 2 tbsp Sesame Oil
- 2 tbsp Sunflower Oil
- 2 tsp Chopped Garlic
Method
- Prepare the chicken by cutting into small strips. Add the strips to a bowl with 4 tbsp cold water, cornflour and 1 tbsp sesame oil. Mix well to combine the paste with the chicken, making sure an even coating.
- Slice the onion and mushrooms.
- Heat 1 tbsp sunflower oil in a frying pan. Crack and whisk the eggs together in a small jug or cup and add to the hot frying pan (like your making an omelette). Meanwhile, make the sauce mixture by adding 8 tbsp water, the hoisin sauce, oyster sauce, soy sauce and 1 tbsp sesame oil. Mix well. Go back to the frying pan and turn your omelette for even cooking. Cook for around 2 more minutes til golden brown. Remove omelette and set aside on a plate.
- In a saucepan, boil the rice for 15 minutes.
- Add the remaining sunflower oil to the frying pan and heat. Now add your chicken along with some salt and pepper and the garlic. Stir as you're cooking for about 5 minutes until the chicken starts to brown. Meanwhile, chop your spring onions into small pieces.
- Add the mushrooms and onions to the chicken and cook for another 5 minutes until the onions start to soften. Meanwhile, slice your cooked omelette into small pieces.
- Add the beansprouts to the mixture and cook for 1 more minute.
- Add the sauce mixture to the pan, stir well and let gently simmer for 4 minutes.
- Serve the rice and chicken, topped with the sliced omelette and chopped spring onion.
Notes
- The best alternative to chinese takeaway.
Tips
- You can add the sliced omelette to the chicken and sauce itself and mix in but I prefer it on top to retain its texture and colour.
Swaps and substitutes
- Traditionally, you should use shitake mushrooms in this recipe, but I only use easy to source ingredients and it still tastes delicious!
- You could serve this with noodles instead of rice.
No-waste tips
- If you're buying a pack of mushrooms, look at other recipes with mushrooms to cook the same week.
- Fresh beansprouts don't last long, so if you have some left over you can freeze these in batches for future stir fries.
