Ingredients

  • 500 g Minced Beef
  • 1 kg White Potatoes
  • 1 item Onion
  • 1 item Beef Stock Cube
  • 1 tbsp Gravy Granules
  • 1 tsp Worcestershire Sauce
  • 1 tbsp Butter
  • 150 g Carrots
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 tbsp Olive Oil

Method

  1. Finely chop the onions and carrots into small pieces, and slice the potatoes.
  2. In an ovenproof and hob proof shallow casserole dish, heat the oil and add the minced beef. Brown the mince for around 5 minutes.
  3. Meanwhile, in a separate saucepan, par-boil the potatoes for 5 minutes then drain and set aside.
  4. Add the onion and carrot to the pan with the mince, and fry until softened for 5 minutes.
  5. Make up 400ml of beef stock using the stock cube and add to the pan, along with the Worcestershire sauce and some salt and pepper. Keep simmering and thicken with the gravy granules, adding more if required.
  6. Melt the butter carefully in a small dish in the microwave for around 10-15 seconds. Pre-heat the oven to 180 degrees.
  7. Take the pan off the heat. Arrange the potato slices around the dish until completely covered and all the potatoes are used.
  8. Brush with the melted butter and sprinkle with some freshly ground pepper. Bake in the oven for 45 minutes until the potatoes are starting to brown.

Swaps and substitutes

  • You can add other vegetables to the dish if you like, such as garden peas or swede.

Equipment and cleaning

  • Cast iron casserole dishes are perfect for hot pots, as you can use them on the hob and in the oven. If you don't have one, use a normal frying pan and then transfer to an ovenproof dish to bake.
