Ingredients
- 500 g Minced Beef
- 1 item Onion
- 1 400g tin Chopped Tomatoes
- 1 500g pack Passata
- 1 400g tin Red Kidney Beans
- 2 tsp Chopped Garlic
- 1 item Beef Stock Cube
- 1 tsp Sugar
- 1 tbsp Worcestershire Sauce
- 1 tsp Paprika
- 1 tsp Ground Cumin
- 1 tsp Chilli Powder
- 300 g Long Grain Rice
- 1 pinch Salt
- 1 pinch Pepper
- 1 tbsp Olive Oil
Method
- Finely chop the onion.
- Heat the oil in a large frying pan. Add the mince and brown for 5 minutes (drain off excess fat if needed).
- Add the onion, garlic, crumbled stock cube, salt and pepper, and fry for 5 minutes until the onion has softened.
- Add the chopped tomatoes, passata, kidney beans, chilli powder, cumin, paprika and sugar. Mix well and leave to simmer on low for 20 minutes.
- Meanwhile, boil the rice in a separate saucepan for 15 minutes.
- Check the chilli and season with salt and pepper, before serving with the boiled rice.
Notes
- Chilli con carne and rice is a hearty, flavour-packed classic that makes an easy, satisfying dinner the whole family will happily tuck into.
Tips
- If you like it spicier add more chilli powder.
- Also goes well with nachos, a dollop of sour cream and guacamole.
