Ingredients

  • 600 g Mini Chicken Breast Fillets
  • 4 rashers Smoked Bacon
  • 125 g Mushrooms
  • 25 g Butter
  • 300 ml Reduced Fat Creme Fraiche
  • 1 tsp All Purpose Seasoning
  • 1 item Chicken Stock Cube
  • 4 tsp Chopped Garlic
  • 2 tbsp Fresh Parsley
  • 1 pinch Salt
  • 1 pinch Pepper
  • 900 g White Potatoes
  • 3 tbsp Olive Oil

Method

  1. Peel and chop the potatoes into small cubes. Pat them dry with some kitchen roll and add to your air fryer along with 2 tbsp of olive oil and some salt and pepper. Air fry for 35 minutes on 180 degrees, shaking frequently to ensure even coverage and crispiness.
  2. Season the chicken mini fillets with all purpose seasoning and pepper and set aside.
  3. Slice the mushrooms thinly, and cut the bacon rashers into small pieces.
  4. Heat the remaining olive oil and butter in a large frying pan. Add the chicken mini fillets and fry until golden brown on each side for about 10 minutes. Make up 400ml chicken stock using the stock cube.
  5. Add the garlic, mushrooms and bacon and continue frying until the mushrooms are softened and the bacon is starting to crisp, around 10 minutes. Chop the parsley.
  6. Add the stock and simmer gently for around 5 minutes.
  7. Add the creme fraiche, and some salt and pepper and stir well to warm through but not boil.
  8. Serve the chicken and sauce with the potatoes and sprinkle with chopped parsley.

Tips

  • Add some garlic powder and dried rosemary to your potatoes for extra flavour.

Swaps and substitutes

  • You can serve with mashed potatoes or even rice or pasta if you prefer.
  • You can use double cream instead of creme fraiche for a richer sauce.
  • If you don't have an air fryer you can roast the potatoes in the oven for around 45 minutes on 180 degrees celsius.
