Ingredients
- 300 g King Prawns
- 6 tbsp Sriracha Sauce
- 4 tbsp Light Soy Sauce
- 1 tsp Sugar
- 1 bag Pepper Stir Fry Mix
- 4 tbsp Sweet Chilli Sauce
- 1 tsp Chopped Chilli
- 3 tbsp Sesame Oil
- 1 tsp Chopped Garlic
- 200 g Long Grain Rice
- 1 tbsp Sesame Seeds
- 1 tsp Ginger Puree
- 1 pinch Pepper
- 2 tbsp Oyster Sauce
Method
- Boil the rice according to instructions. This should take around 15 minutes.
- Meanwhile in a jug or bowl mix together the sriracha sauce, soy sauce, sweet chilli sauce, oyster sauce, sugar, 1 tbsp sesame oil and some pepper.
- In a large frying pan or wok heat the remaining sesame oil. Once hot add the prawns, garlic, ginger and chilli. Fry for 3 minutes until the prawns are pink.
- Add the stir fry vegetable mix and stir fry for 2 more minutes.
- Add the sauce and stir fry for 3 more minutes until the sauce is warmed through.
- Serve with the rice once cooked and sprinkle with the sesame seeds.

Tips
- Once you get going this all cooks fairly quickly so have all your ingredients prepared and ready to hand.
- If your frying pan is quite small you may need to cook in batches to make sure you get that stir fried crunchiness.
Swaps and substitutes
- You can use frozen prawns just ensure thoroughly defrosted before cooking.
- You can use smaller prawns or even chicken instead king prawns, just remember to adjust cooking times accordingly.
- You can serve basmati rice or jasmine rice with this dish instead of long grain. Also goes well with noodles if you have them.
