Ingredients
- 3 tbsp Granulated Sugar
- 1 pinch Black Pepper
- 3 tbsp Mayonnaise
- 400 g Chopped Tomatoes
- 1 tbsp Paprika
- 50 ml Red Wine Vinegar
- 1 pinch Salt
- 6 items Bratwurst Sausages
- 50 g Crispy Onions
- 1 tbsp Sunflower Oil
- 600 g Oven Fries
- 3 items Gherkins
- 1 item Onion
- 3 tbsp Curry Powder
Method
- Preparation: Peel and finely chop the onion. Chop the gherkins and set aside for serving.
- Preheat the oven according to the sausage and fries packet instructions. If they require different temperatures, cook the fries separately in an air fryer if available.
- Place the sausages on a baking tray and cook according to the packet instructions, turning as directed, until cooked through.
- Cook the fries in the oven or air fryer according to the packet instructions, timing them to finish with the sausages.
- Meanwhile, heat the sunflower oil in a saucepan over a medium-low heat. Add the onion and cook for 8–10 minutes, stirring occasionally, until softened.
- Add 2 tablespoons of the curry powder and the paprika. Stir and cook for 1 minute.
- Add the chopped tomatoes, granulated sugar and red wine vinegar. Stir well, bring to a gentle simmer and cook for 10–15 minutes, stirring occasionally, until slightly thickened.
- Remove the saucepan from the heat. Carefully blend the sauce with a hand blender until smooth, keeping the blender head submerged to prevent splashes. Season with the salt and black pepper.
- Once cooked, slice the sausages into bite-sized pieces and divide between three plates alongside the fries.
- Spoon the curry sauce over the sausages. Lightly sprinkle with some of the remaining curry powder, to taste.
- Drizzle the mayonnaise over the fries and finish with the crispy onions and chopped gherkins.
Notes

Tips
