Ingredients

  • 1 tsp Chopped Garlic
  • 1 pinch Salt
  • 1 pinch Pepper
  • 200 g Smoked Sausage
  • 1 item Green Pepper
  • 1 item Onion
  • 400 g Penne Pasta
  • 1 tub Garlic and Herb Soft Cheese
  • 1 item Chicken Stock Cube
  • 1 tbsp Olive Oil
  • 60 g Grated Parmesan

Method

  1. Slice the smoked sausage, and chop the green pepper and onion.
  2. Cook the pasta in a large saucepan of boiling water.
  3. Meanwhile, heat the olive oil in a large frying pan and add the smoked sausage, pepper, onions and chopped garlic. Move around the pan frequently and fry on low for 8 minutes.
  4. Make up 300ml of chicken stock using the stock cube and add to the frying pan. Simmer gently for 4 minutes.
  5. Once the pasta is cooked, use a pasta spoon to add the pasta into the frying pan (this also moves over some of the pasta water which is amazing at binding the sauce with the pasta). Keep the leftover pasta water in the saucepan for now in case you need it.
  6. Keeping the frying pan on a very low heat, add the garlic and herb creamy cheese, some salt and pepper, and stir well to get a creamy sauce. If it needs loosening a little you can add a bit of the leftover pasta water or some milk.
  7. Once warmed through and smooth you can turn off the heat and serve sprinkled with grated parmesan.
