Ingredients
- 200 g Smoked Bacon Lardons
- 150 g Mushrooms
- 250 ml Reduced Fat Creme Fraiche
- 1 item Eggs
- 60 g Grated Parmesan
- 1 tbsp Olive Oil
- 1 tsp Chopped Garlic
- 2 pinches Pepper
- 250 g Tagliatelle
- 30 g Parmesan Flakes
Method
- Heat the olive oil in a frying pan and add the bacon lardons once hot. Add the chopped garlic and fry for 5 minutes. Meanwhile, slice the mushrooms.
- Cook the tagliatelle in a large saucepan of boiling water for 10 minutes.
- Add the mushrooms to the frying pan.
- In a jug, add the creme fraiche, grated parmesan, the yolk of the egg and plenty of ground black pepper. Mix well together.
- Once the mushrooms and lardons are browned, and the tagliatelle is cooked, spoon the tagliatelle into the frying pan with a pasta ladle, adding some of the pasta water. Keep the remaining pasta water for now.
- Add the sauce mixture from the jug to the pasta mix. Stir well to combine and make a creamy sauce.
- Simmer very gently for 2 minutes, add more pasta water if required.
- Serve in pasta bowls topped with freshly ground black pepper and parmesan shavings.

Swaps and substitutes
- You can use cream instead of creme fraiche for extra richness.
