Ingredients
- 350 g Penne Pasta
- 1 pack Halloumi Cheese
- 1 tbsp Olive Oil
- 2 tsp Chopped Garlic
- 1 item Red Onion
- 500 g Tomato Passata
- 1 item Red Pepper
- 100 g Chorizo
- 1 tsp Dried Oregano
- 2 tsp Paprika
- 2 pinch Salt
- 2 pinch Pepper
- 2 tbsp Fresh Parsley
Method
- Slice the red pepper, chop the red onion finely and thinly slice the chorizo (if not bought ready sliced).
- Heat the olive oil in a frying pan and add the red onion, chopped garlic and sliced chorizo. Fry for 5 minutes until onions soft and the chorizo starts to brown.
- Meanwhile, bring some water to the boil in a medium saucepan and then add the penne pasta. Keep stirring to prevent sticking together.
- Add the sliced red pepper to the frying pan and keep stirring for 2 minutes.
- Add the paprika and oregano to the frying pan and stir in, releasing the flavours for 2 minutes.
- Add the tomato passata to the frying pan along with a good splash of the pasta water; this will help to bind the sauce to the pasta later. Allow the sauce to bubble whilst stirring for about 10 minutes.
- Meanwhile, chop the halloumi into cubes and add into the basket of an air fryer and air fry for 8-10 minutes. Keeping the cubes moving to ensure even crispiness.
- Once the pasta is cooked, drain and rinse to prevent sticking. Chop the parsley and keep aside.
- Add the salt and pepper to the sauce to season. Then add the cooked pasta, stirring thoroughly into the sauce to ensure well mixed and coated. Heat for 1 more minute.
- Serve the pasta immediately using deep plates or pasta bowls. Top with the crispy halloumi and sprinkle with the chopped parsley.
Notes
- A yummy pasta dish with full on flavour the whole family can enjoy!
Tips
- Chorizo can produce a lot of fat when fried and you may wish to (carefully!) absorb some of it using a piece of kitchen roll.
Swaps and substitutes
- You can use any pasta shapes for this dish.
- If you don't have an air fryer you can fry the halloumi cubes in a separate frying pan or slice it and grill it until browned.
