Ingredients
- 200 g Chorizo
- 1 pack Gnocchi
- 1 jar Passata
- 1 item Chicken Stock Cube
- 1 item Mozzarella Ball
- 1 item Red Onion
- 1 tsp Chopped Garlic
- 1 handful Fresh Basil
- 1 pinch Salt
- 1 pinch Pepper
- 1 tbsp Lemon Juice
- 1 jar Roasted Peppers
- 1 tbsp Olive Oil
- 75 g Fresh Spinach
- 1 tsp Sugar
- 0.5 tsp Chilli Powder
- 0.5 tsp Paprika
- 0.25 tsp Dried Italian Herbs
- 0.5 tsp Garlic Powder
Method
- Slice the chorizo and finely chop the onions.
- Heat the oil in a cast iron casserole dish on the hob. Add the chorizo, garlic and onion and fry for 5 minutes until chorizo starts to brown and the onions soften.
- Meanwhile, make 400ml of chicken stock from the stock cube and pour into a large pan.
- Simmer the stock gently and add the passata, drained peppers, sugar, lemon juice, paprika, chilli powder, italian herbs, garlic granules and season with salt and pepper. Simmer for 5 minutes.
- Pre-heat the oven to 180 degrees celsius. Slice the mozzarella ball and chop the basil.
- Using a hand blender, blend the mixture to create a smooth sauce. Add the sauce to the chorizo and onion, then add the spinach and give a good stir.
- Add the gnocchi to the sauce mixture and stir in well, making sure to separate the gnocchi if stuck together.
- Top with the mozzarella slices and the chopped basil and bake in oven for 25 minutes.

Tips
- Serve with crusty garlic bread to mop up that delicious sauce.
- Chorizo can release a lot of oil when cooking so you can carefully remove this with a piece of kitchen roll to soak it up.
Swaps and substitutes
- You can use frozen spinach instead of fresh, just add 2 cubes instead and add earlier to the sauce mixture to ensure fully defrosted and mixed in.

- Cast iron pans although amazing can be tricky to clean, you may need to use a slightly abrasive cleaner or sponge.

- If you have leftover spinach look for other dishes with spinach to cook in the same week.
