Ingredients
- 1 pack Mixed Pepper Stir Fry Mix
- 3 items Eggs
- 3 tbsp Crispy Fried Onions
- 1 tbsp Sunflower Oil
- 3 tbsp Worcestershire Sauce
- 6 tbsp Soy Sauce
- 1 tbsp Ginger Puree
- 1 tsp Chopped Garlic
- 3 tsp Sesame Seeds
- 300 g Chicken Breast
- 150 g Cooked & Peeled Prawns
- 300 g Medium Egg Noodles
Method
- Slice the chicken thinly and marinade in 3 tbsp of soy sauce, ginger puree and chopped garlic for 10 mins.
- Meanwhile, cook the noodles according to the packet instructions, careful not to overcook. Drain and rinse well with cold water and place into a large bowl with the whisked eggs and mix well to coat all the noodles with the egg.
- Heat the oil in a large frying pan or work and add the chicken with its marinade. Fry until browned for around 5 minutes.
- Add the stir fry mix and prawns and stir fry for a further 5 minutes. Keep it all moving around the pan.
- Keep a third of the chicken stir fry in the pan and add a third of the noodles. Add 1 tbsp of soy sauce and 1 tbsp of Worcestershire sauce and stir fry for 1 minute then serve sprinkled with the onions and sesame seeds.
- Repeat the step above for the remaining 2 servings.
Notes
- A classic Japanese favourite that's sure to please!
Tips
- From step 5, doing this dish in batches will prevent the stir fry mix "sweating" so it will keep its crispiness and crunchiness, whilst still retaining the stir fry flavour.
Swaps and substitutes
- Use soba noodles if you can get hold of them, otherwise egg noodles work just as well.
- You swap the stir fry mix for other stir fry veg such as pak choi and mange tout. I prefer a ready a bag of prepped veg for this recipe as it saves time and waste!
- You can use 1 tsp garlic puree or 1 garlic clove chopped instead of chopped garlic.
