Ingredients

  • 1 tin Coconut Milk
  • 3 tbsp Smooth Peanut Butter
  • 75 g Salted Peanuts
  • 2 items Red Chilli
  • 700 g Diced Stewing Beef
  • 1 item Onion
  • 500 g Baby Potatoes
  • 1 jar Massaman Curry Paste
  • 1 item Beef Stock Cube
  • 1 item Lime
  • 2 tbsp Plain Flour
  • 2 tbsp Sunflower Oil
  • 2 tbsp Fresh Coriander
  • 1 pinch Salt
  • 1 pinch Pepper
  • 300 g Basmati Rice
  • 3 tbsp Soy Sauce
  • 2 tbsp Brown Sugar

Method

  1. Heat half the sunflower oil in a frying pan. Coat the diced stewing beef in the flour with a bit of salt and pepper. Add half the beef to the hot pan and brown it off. Then add it to the slow cooker pot and heat the remaining oil and brown off the remaining beef. Meanwhile, make 500ml of beef stock and add this to the slow cooker.
  2. Slice the onion and add this to the slow cooker. Also add the massaman paste, coconut milk, soy sauce, peanut butter and sugar. Stir well to combine all ingredients and cook on high on the slow cooker for 2 hours.
  3. After 2 hours, add the baby potatoes and cook on low for a further 3-4 hours. The beef should be lovely and tender.
  4. Chop the lime in half and squeeze the juice into the curry. Give it a good stir and test the curry to see if it needs seasoning. Boil the basmati rice for 8-10 minutes in a saucepan then drain well and rinse with boiled water to prevent sticking. Whilst the rice is cooking, chop the red chillis, peanuts and fresh coriander.
  5. Serve the curry with the rice and sprinkle with the chillis, peanuts and coriander.

Notes

  • This is my go to classic Saturday slow cooker meal. Fairly easy to throw together in the slow cooker and then leave to cook whilst you get on with your busy day. A lot of ingredients but it's very tasty!

Swaps and substitutes

  • You can use reduced fat coconut milk if you're watching the calories, tastes just as nice.
  • Great also served with crusty bread instead of rice.
  • You can use normal granulated sugar if you don't have brown sugar.
